Beautiful Orange Cake!
Monday, 2 May 2011 23:34I just baked a cake. Well, it was a recipe for one cake, but I used 3 small paper molds, so I got 3 mini cakes!

Since it was a recipe from a German cake/pastry book, I'm going to share the recipe - our modified version!

★ Unnamed Orange Cake ★
Ingredients
Flour - 250 gr
Corn starch - 80 gr
Baking powder - 1.5 tsp
Butter - 180 gr
Eggs - 5 pce
Orange juice - 2 oranges
Lemon juice - half lemon
Orange skin (grated) - 2 oranges
Lemon skin (grated) - 1 lemon
Rum OR Orange liquor - dash
▲ Beat the sugar and butter till fluffy; add eggs one by one; add in the orange and lemon skin
▲ Sift flour, corn starch and baking powder together. Mix with the sugar/butter batter.
▲ Reduce the orange juice and lemon juice to around 3-4 tsp
▲ Add a little rum/orange liquor and the reduced orange juice
▲ Bake at around 180C for around 60 minutes
(Since I used 3 mini molds of size 65x175x45 cm, baking time actually took around 30 minutes at 170C)
The original recipe asked for 3 teaspoons of plain orange juice, no lemon juice. I think reducing the orange and lemon juice adds a stronger flavour for the cake.

The original recipe also asks for glazing over the cake, but, you know, I'm too lazy for the decorating part. The most effort I would put to decorating a cake is... icing sugar over stencils. Yes, I'm that lazy :P
One cake is for home, two for give away tomorrow at a lunch gathering with 2 friends :D
Worrying that my colleagues in the office would be "jealous" of the cake, I might make another cake tomorrow night. Dunno what recipe to use yet, but we'll see :D
