My Dad has this what we call his "Pastry Bible" in German that he has been using every Christmas over the years. Last year, just when Christmas was over, he suddenly said he wanted to get the English version of the same book. He knows it exists because a colleague of his has it.

Being the nice daughter that I am, I did a search for him and voila! I found it. Pity these are 1978 (German) and 1979 (English) books, so I couldn't source a brand new one and had to get second hands. Did a lot of sifting through as some sellers won't ship to Asia, and some listings stated the book had obvious wear-and-tear marks.

Found one that costed around USD$7, but shipping was USD$20. That's why I hate buying books online. Anyway. Placed the order, received it today. Went to Dad to get my money back and he says "ah, your Birthday Present! It's for you!"

WTF!!?!?!?!????????

That's not how presents work LOL! You still need to pay me back, Dad! LOL. It's not even a book I wanted, and won't be using LOL.

Aaaaand when I looked inside the book, the original price was like 5GBP, so it was less than USD$7??? Aren't second hand books supposed to sell cheaper? Or maybe this one is an out-of-print thing? Whatever.

Had a good laugh, had to share this laugh ;-)

So... my Mom got herself a new rice cooker. Really fancy. It's RED in color. It's small. She loves it.

However, since it's some fancy-schmancy newfangled technology stuff, she doesn't really know how to use it, LOL.

And of course, when she gets new stuff that she doesn't know how to operate, she comes and asks me. Why would I know how to use it? So I had to read the operations manual. It's actually pretty simple and self-explanatory.

Anyway, the folks find out that the rice cooker can be used to bake cakes. So they immediately try out that function, and baked a cake last night. Since they were trying it out, they used a provided recipe of a chocolate cake.

Admittedly, the cake came out looking quite nice. How smooth! Taste-wise, it wasn't anything special. Actually it didn't really taste of anything.

So, we have a secret family recipe for a chocolate cake called the Midnight Cake. I might have mentioned of it before, so some of you may have already read of it at some point in time. It uses quite a lot of cocoa powder (and absolutely no milk) so it's a very dark cake, and the family had called it the Midnight Cake. My aunt's and my Mom's recipe differ a bit (one measurement in tails and the other one measurement in grams, they come out more or less the same; Mom's has less sugar though). The name has become a joke in my immediate family though, because we tend to bake the cake at night and finish around Midnight. Double entendre, if you will.

Well, this tryout rice cooker cake was so light in color, and we finished baking it some time between 10pm-11pm. Dad called it the "11pm Cake", but whether he's talking about it not being dark enough, or the time of the baking, I don't know, but LOL. Dad joke. I didn't think my Dad would ever come up with one himself.

I'll try to bake a Midnight Cake with the rice cooker one time though, see how it turns out.

This is me being super lazy. I saw a video on Facebook of a Banana & Blueberry Bread thing. So I though I'd make it.

I was meticulous this time to measure everything first and only after mixing them. Still, I forgot to prepare a mold beforehand and when I was almost done, I started looking for a mold. Times like these, of course I couldn't find a mold. In a sudden strike of inspiration, I remembered my breadmaker and I thought I'd just bake it in the breadmaker.

As breadmakers go, at least the ones I've used before, there's no temperature setting... I didn't factor that, so after the first round of baking (1 hour), the inside of the bread was still gooey and wet, so I had to bake it again. I still have another 30 minutes to go, hopefully it actually cooks the bread without drying it out too much. Of course my Dad just looked at him in disdain, haha! Hey, if this actually works out, then I know I CAN use the breadmaker just for baking but I have to double the time. We'll see.

Texture and looks are also ok, albeit the blueberries seem to have all grouped to one side. However, the taste of the bread was total yuck. Either it's just me who doesn't like honey (honey taste is strong - and I cut down on the honey already), or the bananas I used weren't sweet? No idea.

I think what I'll do is slice them thin and double bake them them, make a biscotti sort of thing out of that.

BUT! Now I know, the bread machine can do that too! (but double the bake time)

OMG OMG OMG this is supposed to be Wordless but I am so excited I just have to say something. So I went to a cake art workshop by Bravo Cakes last weekend.


*points up* THAT took an awful lot of time and I made it! The cake base is a Korean rice cake thingamajoo which the workshop made for us. She demo-ed one, showing us how it's made. It's a really weird cake. It's basically just glutinous rice flour and water. There's one more flour that I don't know what it's called in English, Google translate says it's "sticky powder" but, I don't think so... huh.

The flowers are not marzipan. Though I'm also interested in learning how to make marzipan flowers/decorations. What I used this time is a white bean paste and it's all piped out. That pink rose is so squashed LOL.

This private workshop was a little expensive and the cake base didn't keep well, so we had to throw out basically more than half of it after a couple days in the fridge. It's not supposed to be fridged, and if fridged we should steam it warm... but the bean paste deco can't take heat and have to be fridged (geez)

However if I manage to get a spot at the culinary school for a similar cake decorating class then I can practice more my piping skills! This was fun!

So, recently I've been using the bread machine like crazy. I wonder if it's going to break down soon...

I've been following the recipes that came with the manual one by one. So far my favorite is the White Bread recipe. 

Recipe for your information, as follows:

For 750g weight
250ml Milk/Water
2L spoon Butter
0.5S spoon Salt
2L spoon Sugar
3cups Flour
2L spoon Skim Milk Powder
0.5S spoon Yeast

S = small, L = large

Place ingredients into the bucket in the order suggested (or as long as all liquids underneath and dry ingredients on top)

The first time I made this recipe, it was a very dense, heavy bread and I LOVED it. I didn't have time to melt the butter so I used olive oil, and I used a processed milk that is low fat, high calcium but very dense (unlike usual low fat milk, the milk is very watery).

I tried to make it a second time but changed the following

200ml Earl Grey Tea (200ml water and 2 spoons of tea)
50ml Water
3L spoon Sugar
A bit of Earl Grey Tea Leaves as the dough is mixing


With the rest of the ingredients unchanged. Out came a very light bread. Not bad, but too sweet. I thought using tea would make the bread very bitter so I added another spoon of sugar (and I did not add salt as we ran out of salt... a really long story!)... Maybe next time I'm going to use the full 250ml tea... or to make it a bit more compact, 200ml Tea (but stronger) and 50ml Milk... yes... maybe I will do that...

A question for friends who are familiar with Japanese cooking: what does a store-bought Miso look like? Is it a bottle of sauce, a packet of powder, a tube of paste... ?? After I've mucked around enough with the Earl Grey Loaf, I intend to make a Miso Bread (nicked the recipe off Cookpad.com

In my search for Miso, I instead bought a bottle of Miso & Sesame Salad Dressing... perhaps I can use that... hm....!!!!

Today was a really busy day. But I managed to bake a bread :D
Like always, I'm sharing! 

Banana bread, yay! Maybe I can toast it after baking and make banana bread toast

It's actually a recipe a nicked off after a random search of "Banana bread for bread machines". I followed it in its entirety (except for baking time), but plan to make with less sugar next time. Also, the name is bread, but I think it's more like a cake. It took me some 2 hours to bake the thing.

Banana Bread (Quick Bread for Machines)

A quick banana bread for the bread machine. Use the DOUGH setting for mixing, then BAKE with the control set to light.

Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup white sugar
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise

Directions
  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to assure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

And it was yummy too! I think I'll try to cut it thinly and toast it tomorrow and see how it goes :P

I can't believe my 4-day weekend is half over! Why do weekends pass so quickly!?? It's Sunday night already!?

I have to make full use of my Monday and my Tuesday!

Let me divulge a little more of my romantic past. A very select few of you might know something about this already (I made one such post a real long time ago!). I wanted to elaborate in the "I only attract weird, scary, old guys."

Around my early years in High School, I used to frequent one video games store. Not arcade games, but a shop that sold these games. I still remember at that time Sony and Sega were having their PlayStation and Sega Saturn wars. Everyone bought the PlayStation. My Sis convinced my Mom to buy us the SegaSaturn (bad, bad, decision!). And so, at the beginning of the month (our pocket money "payday") I would pass by the shop to look. I could never afford to buy a new game every month (heck, with that measly amount of pocket money... it was just enough for me to get my necessary school supplies and eat out twice a month with friends)

So, this shopkeeper had the hots for me. I didn't know it until it was too late. I would go to the shop every month, with friends, with my Sis, alone. You know, normal window shopping habits. When I found out he had the hots for me? There were a few incidents:

He gave me gifts.

Pocket Pikachu! My pedometer! Puyolin. Pity it's not working anymore!

You recognize that? That's the Pocket Pikachu! Oh yeah I was a fan! I wasn't too big a Pokemon fan, but I liked Pikachu and Charmandar (sp?) And that on the right is a Puyolin. It doesn't work anymore, pity. Puyo Puyo from the Compile era is my favourite! Too bad Compile had to close down, and now Sega (or someone else) has completely revamped the Puyo Puyo series and I don't like it anymore.

Yes, when my Sis and my cousin bought the Pocket Pikachu, Mr. Shopkeeper gave one to me. He sold the US version to my Sis and my cousin. He gave the Japan version one to me. At another point in time, he gave me the Puyolin. He also gave me an SD Gundam Piggy Bank... it was the shape of one of those Gundams and when you put a coin in the Gundam talks, LOL.

So yeah. He gave me gifts.

He also preached to me. His religion is Buddhism. And he talked ALOT of Buddhism talk to me. He let me work for a week during my Easter break. And he continued to preach.

And he never stopped from asking me out for dinner. I never went out for dinner with him. ahem. yah. Never.

Now the shop is closed, I don't know his whereabouts, but it doesn't matter, because I'm not seeking him out. He may not be old enough to be my father, but he is still uncle material, and he is a weird man. I don't remember when and why I stopped going to his shop, but it wasn't because of all the gifting. Nevertheless, I guess I was scarred for life.

So, after talking about such embarrassing things, let's make happy thoughts. Food makes me happy!

I had these for lunch with my parents yesterday. We went to the food court above the neighborhood wet market:

Noodles! Sweet bean curd dessert

The first one is... a bowl of plain noodles (each one had his own) and a plate of "Everything Dish" (for sharing). These Soup Noodle stores basically just boil everything and anything in soup to cook them. The noodles? Cook it in some beef stock soup. The 2 balls you see on the noodles? Fish balls. Boiled in said soup base. On that plate? Oh, a little of everything that's on the menu. Chicken wings, chicken feet, beef internal organs, pork skin, mushrooms, potatoes, squids, veggies, beef brisket, pork knuckles, mini frankfurters... and that's just what I could remember right now. The second is a bean curd dessert... Call it Sweet bean curd, Soya bean dessert, Sweet Tofu, or the proper Chinese name, "Tofu-fa"... it's chilled bean curd, served in a special sugar syrup and a bit of carnation milk. I can assure you, that is the best Tofu-fa you will find in town.

Back tracking to Friday, despite being the last day Boss would be hanging around, I had a quick sandwich lunch and tried a new milk drink. It was yuck (the milk drink)

The Vitasoy soy drinks are usually very good. Well... the original and plain flavors, I mean. With this low sugar red bean flavor, I know they're trying to make a Red-Bean-Fleecy type of flavor... but naaaaah. Not getting that anymore...

My friend Jenny came over this afternoon because my Dad wanted to show her how to make a Swiss Roll (he was fed up of hearing my talk about her failed attempts). She brought us Cherry Pie and so while we were waiting for the cream and the sponge cake to chill we had some of it... with my Dad's home-made White Chocolate and Ginger Ice Cream.

It's Sunday so of course we had our Badminton game today (yes! It's getting more and more regular!) I had plans to have a light dinner, but then the menu had something interesting so I ordered it. Tuna and Caramalized Apple sauce Angel Hair. It wasn't bad, but it wasn't something to tell home about. And well, with my stupid habit of "no leftovers allowed" I finished it. Damn.

As I was typing this, my Dad turned on the TV in my room and flicked to a Hong Kong Channel that was highlighting the situation of stray dogs and cats in Hong Kong. I got so upset and I started bawling. Now my eyes feel so dry and painful and I feel dreadful too!!!! I don't want to watch these things, I can't take it emotionally!

I went to my first official cake lesson last week. Recently these small cake utensils shops have been popping up around Macau, and it's been very popular among the young ones. Basically, you check out their cake class schedule, they make a new cake every day, choose your cake and apply to join the class. All ingredients and utensils are provided, and when the cake is done, you take your own cake home.

My Artistic Abilities: 0

I'm pretty confident with my cake baking skills, the teacher also commented that it was obvious that I'm not a newbie in the pastry kitchen (yo!) but my artistic skills are really lacking. I couldn't decorate the cake for saving my own life. baaaah.

Here's the recipe, I translated it from Chinese, so apologies if I made any wrong translation and it doesn't make sense! Recipe courtesy of Kuma Kitchen Macau. Translated by kat (that is, me!)

★ Hazelnut Banana Mousse Cake ★

Chocolate Cake
Ingredients
Whole eggs - 2 pc
Red sugar - 20 gr
Sugar - 20 gr
Low gluten flour - 20 gr
Cocoa powder - 10 gr
Corn starch - 15 gr
Baking soda - 1/4 tea spoon
Milk - 10 gr
Butter - 10 gr

1) Add sugar into eggs and beat
2) Mix flour, cocoa powder, corn starch and baking soda. Divide into 2 parts to add into egg mixture separately. Mix with a spatula.
3) Add in butter (melted) and milk
4) Pour into a flat mold. Bake for 8 minutes at 170 degrees Celsius. Let cool after baking. Measure height of your cake mold, and cut the cake into at least 2 strips 1-2 cm shorter than the mold height.

Hazelnut Banana Mousse
Ingredients
Whipping cream - 180 gr
Hazelnut paste - 110 gr
Banana for mousse - 1 pc (roughly 100 gr)
Gelatin powder - 8 gr
Water - 20 gr
Banana for filling, sliced - 1 pc

1) Beat up the whipping cream to around 70% hard
2) Mix water into the gelatin powder, keep the mixture heated in a bain marie. Add in the hazelnut paste (previously melted in a bain marie), and add in mashed banana. Mix with a spoon
3) Add the hazelnut paste mixture into the whipping cream. Mix with a spatula

Ingredients
Banana
Hazelnut
Chocolate flakes

That's the recipe provided to us, but since it was a class, there's one part that isn't included in this recipe sheet - and that is how to make the actual cake! Here's an instruction sort of thingy by moi~

Cake
* use a mold ring that has no base, wrap non-stick cookie baking sheet around the mold ring to make a base
1) Surround the sides of the mold with the cake strips. Use any odd pieces of cake to cover the bottom of the mold
2) Pour in the mousse mixture to around half full. Add in sliced banana. Try to place the sliced bananas evenly
3) Pour in the remaining mousse mixture into the cake. Fill it up to the top
4) Let chill in the fridge
5) When chilled, unwrap the cookie sheet, and slowly slide the mold ring out

I just baked a cake. Well, it was a recipe for one cake, but I used 3 small paper molds, so I got 3 mini cakes!


The cake smells so nice!

Since it was a recipe from a German cake/pastry book, I'm going to share the recipe - our modified version!
 
★ Unnamed Orange Cake ★

Ingredients
Flour - 250 gr
Corn starch - 80 gr
Baking powder - 1.5 tsp
Butter - 180 gr
Eggs - 5 pce
Orange juice - 2 oranges
Lemon juice - half lemon
Orange skin (grated) - 2 oranges
Lemon skin (grated) - 1 lemon
Rum OR Orange liquor - dash

▲ Beat the sugar and butter till fluffy; add eggs one by one; add in the orange and lemon skin
▲ Sift flour, corn starch and baking powder together. Mix with the sugar/butter batter.
▲ Reduce the orange juice and lemon juice to around 3-4 tsp
▲ Add a little rum/orange liquor and the reduced orange juice
▲ Bake at around 180C for around 60 minutes 
(Since I used 3 mini molds of size 65x175x45 cm, baking time actually took around 30 minutes at 170C)

The original recipe asked for 3 teaspoons of plain orange juice, no lemon juice. I think reducing the orange and lemon juice adds a stronger flavour for the cake.
The original recipe also asks for glazing over the cake, but, you know, I'm too lazy for the decorating part. The most effort I would put to decorating a cake is... icing sugar over stencils. Yes, I'm that lazy :P
 
One cake is for home, two for give away tomorrow at a lunch gathering with 2 friends :D
Worrying that my colleagues in the office would be "jealous" of the cake, I might make another cake tomorrow night. Dunno what recipe to use yet, but we'll see :D
